


Diaspora Co Madhur Jaggery
This deeply flavourful, unrefined sugar has sweetened South Asian kitchens for centuries. Made from fresh-pressed sugarcane juice, Diaspora Co’s Madhur Jaggery is naturally farmed in Pargaon, Maharashtra, where mineral-rich soil and careful harvesting yield a jaggery with complex notes of toffee, caramel, and earth.
Grown by the Randive family on a biodiverse 10-acre farm, the cane is juiced and cooked using its own leftover fibre as fuel, then clarified with okra pulp—a traditional method that removes impurities without chemicals. The result is a rich, mineral-dense sweetener that brings depth to everything from chai and lattes to golden milk and spiced baking.
